Palmer Lake, Colorado is known all over the Front Range as a
delightful, romantic locale for enjoying gourmet Italian cuisine.
This
quaint Italian-style landmark building has been standing for
about one hundred years; it was originally constructed around
the year 1900 by a Swedish carpenter named John Lundquist, and
some of its original functions included a post office and an
ice cream parlor.
In 1912,
Bruce and Alice Willis purchased the building and opened the
Sundance Café and Hotel. In 1956, the Romitti family turned
this building into the Roman Villa Restaurant, which flourished
until 1978.
In 1980,
Linda McColl became the proprietor, and opened the restaurant
as The Villa at Palmer Lake. The Villa at Palmer Lake was so
successful that in 1991 McColl added a new dining room with
a simulated grape arbor. In keeping with the style of the building,
we intend to provide a menu of traditional Italian cuisine prepared
with only premium products (when possible, locally and naturally
produced).

personal note from Chris:
In
Feb of 2001 I accepted the job of Exec. Chef at the Villa
at Palmer Lake (email: chefbowie@yahoo.com),
which is a building in Palmer Lake that has been around for
about 100 years and a restaurant for the last 50. The building
offers a fine dinning Italian atmosphere nestled in the foothills
of beautiful Palmer Lake, which is centrally located two miles
west of I-25 half way between Denver and Colorado Springs.
The cuisine we offer at the restaurant is traditional Italian
made with the best and freshest ingredients possible. All
our bread, pasta, sauce, and dessert is made in house.
